Perfect and Classy Rainy Day Outfit + Soup Recipe!

Well, we are inevitably in the midst of the rainy and cold days from now until Spring! Don't get me wrong, I LOVE the cold weather, just not the rain because of my hair ;). I have been on a soup kick lately and I am LOVING it! I found a really easy soup recipe that makes a TON for leftovers as well! And of course, I have a classy and perfect outfit for a cold and rainy day!

Bacon Potato Corn Chowder

Ingredients:

1. 1/2 pound bacon, chopped- I use the hormel thick cut to give it more flavor

2. 1/4 cup chopped onion- I use yellow but any color works!

3. 1 1/2 pounds Yukon gold potatoes - about 5 medium ones- peeled and cubed

4. 1 can (13 3/4 oz) cream style corn

5. 1 can (12 oz) evaporated milk

6. 1/4 teaspoon salt

7. 1/4 teaspoon pepper

Instructions:

1.  In a large skillet, cook bacon over medium heat until crisp, stirring occasionally. Remove with a slotted spoon; drain on paper towels. Discard drippings, reserve 1 1/2 teaspoons in the pan. Add onion to drippings; cook and stir over medium- high heat until tender. 

2. Meanwhile, place potatoes in a large saucepan; add water to cover. Bring to a boil over high heat. Reduce heat to medium; cook, uncovered, 10-15 minutes or until tender. Drain and save 1 cup potato water.

3. Add corn, milk, salt, pepper and reserved potato water to saucepan; heat through. Stir in bacon and onion. 

- Tips and tricks-

•  I always fry 2 pounds of bacon at a time, drain the slices well, then freeze them. The slices don't stick together, so it's easy to remove a few from the bag for a sandwich or to crumble for a recipe.
• Peel onion, cut in half vertically. Leave root end intact. Place onion flat side down on cutting board. Make several slices parallel to the board into the onion, leaving root uncut. Then slice perpendicularly to chop the onion.
